but the PocketTouch application is just so annoying,

How about a really simple application, that just uses the volume button that's on the side of the iPhone?
Something like:
you enter the app while music is on, then put the iPhone in your pocket,
if you want to get the volume up or down you just click the volume button up or down as usual, but if you want to switch song - you click the home button, and then the volume button - UP for next song, DOWN for previous song..
oh, and if you wanna stop the song, you just get the goddamn headphones off your ears, how's that?

What version of the app are you using. If you are current, you should be able to go into ther app's settings and turn off the volume swipes. I added that in long time ago. I believe it was with 1.0, when I added in the settings.
Also with 1.0, the volume changes became a lot less sensitive; meaning: quick accidental swipes won't increase the volume all that much; while longer, more deliberate swipes will increase the volume a greater amount. The volume was set up this way specifically to prevent people from accidently deafening themselves.
The current version is 1.2.
If you don't want to tap the screen to pause the song, 1.3 will let you disable that feature. 1.3 has been submitted and will hopefully be available in Installer soon.
As far as changing songs by tapping the home button goes, that is a bad idea. You would have no way to exit the app once it is open.
