After the unlock? now what?

I've been following the unlock thing closely and have unlocked my 1.1.2 TB using ziphone 2.1 I think, then I started having problems and just restored straight thru itunes.

My problem is it won't sync with itunes when I try with the T-mobile sim in the phone. I have to install the ATT sim in order to sync. Is there a conclusive guide somewhere as to what to do 'after' the unlock?
I have two lines, one with ATT (primary #) obviosly the iphone line, and a line with t-mobile that I use and will eventually port-out to. My goal is to port-out to the t-mobile line and use my t-mo exclusivly, but I can find anything explaining how the "after unlock" stuff works (syncing, managing music etc)

I would try search, but I honestly dont know what to search for.

I am running a PM G5 with 10.5.2 and have 1.1.2 otb, upgraded to 1.1.4 via itunes

there is no difference what sim u have in.i have exactly same situation as u.everything works fine.sync with t-mobile same as with att.im restored in itunes to 1.1.4 and "do it all" with ziphone 2.5c but im running vista.but i believe i doesnt matter
