if you install the BSD subsystem and openSSH you can use WinSCP to download all your music back to your computer. I would then use a mass renamer (I've used Tag&Rename in the past) to use the ID3 info to rename each file and organize it into folder automatically for you. You can choose the format of the mp3 using variables in the program so it's also named exactly like you want.
The reason you need the mass renamer is because iPods store music oddly if you ask me.
in WinSCP go to the /var/mobile/Media/iTunes_Control/Music and you'll find yourself a bunch of directories named F##. In each of these directories are some mp3s (or whatever format your music is in, mp3, m4p, etc.) named in all caps and 4 letters long. You're best off just downloading the whole Music directory and sorting pulling the music out of it on your local drive then using the mass renamer to sort/name it.
