Are you looking to develop native iPhone apps or desktop Mac apps that talk to the iPhone?

In either case, some of the beginning books on Cocoa are probably a good start.

Also, there are some good posts in the iPhone Development forum on resources for beginning iPhone programming.

If you have a Mac, practice on making your apps work there may not be a bad idea.

iPhone programming is different in the UI classes, but the Objective-C is the same, so concepts and programming constructs carry over.
