Backup iPod touch

How can this be done using the iPod and Mac? Not the files (music,videos) but the jailbreak stuff.

SSH in to your iPod and copy all the files you want to save to somewhere. Then when you restore or whatever you can go back in and put them back.

I am having a problem I use Cyberduck and Filezilla to do a backup and using USB 1 eMac to iPod using SSH it takes forever to prepare it copy then about 15 minutes into that process my iPod's connection gets discounted for some reason?
